The ecological agriculture, also known as biological, is define as a summary of agrarian techniques which normally exclude the use of chemical synthesis products, like fertilisers or herbicidal, in order to preserve the environment, maintain or increase the soil fertility and provide wine with all its natural attributes.

An ecological vineyard culture cannot be cultivated with herbicidal because it eliminates not only the weed but also destroy the bacterial activity. This culture forbids the systematic use of fungicides because the vine absorbs them and conserves them in its sap and eventually they end up in human body. Only the use of cobber and sulphur employed as fungicides are admitted in a very limited use. The use of sulphurous is also restrain.

In Spain, this activity is legally regulated since 1989, with the Ecological Agrarian Production Council. Wines made with organic grapes have a specific tag and logo of the Organisation.

The wine resulting from this ecological agriculture is full of fragrances, with nice colour and well balanced.
